Nom nom nom…some days you eat salads and go to the gym. Other days you eat cake and refuse to put on your skinny jeans! It’s about balance… but with this fabulous coconut oat flapjack you won’t feel like you are missing out… with a lot of healthy unrefined alternatives and a little tiny bit of naughty… I think you will agree, this is a winning recipe to rain in those cravings!! –


150g coconut oil, 100g Canadian maple syrup, 80g of coconut sugar, 80g of wholemeal flour, 80g of ground almonds, 1/2 tsp bicarbonate of soda, 300g oats, 1/2 tsp of sea salt, 2 eggs, 175g raisins, 75g of 85% dark good quality chocolate broken into small pieces. I also added a sprinkle of sunflower seeds! Mix all the ingredients in a bowl and place into a rectangular baking tray. Put in the oven for 12-14mins at 180 degrees celsius. –
