Being Irish I love the humble spud πŸ₯” Simple but oh so delicious. One of my favourite ways is simply baked until fluffy on the inside, cracked open and slathered with good old salted butter and sprinkled with Himalayan salt πŸ˜‹ That to me is heaven on a plate 😍

But the little spud is often criticised for being bland and starchy. But it’s packed full of nutrients. It’s carbohydrate-rich so a super source of energy, and it’s surprisingly rich in vitamin C, B vitamins, folate, potassium, magnesium, and iron. What’s your favourite way to eat potatoes?
